Cabinets can be scribed to sit level on a sloping floor, and then the slope is still there and now it is beside a perfectly level counter, where it is more obvious than before. Level the house first if it needs it.

Should we level the house before remodeling?

If it needs it, yes, and it is the cheaper order. New tile and new cabinets installed on a house that is still moving will show the movement first.

Can you keep the character of an old house?

That is usually the point. Timber, boarded ceilings and built-ins that fit the actual wall are the kind of carpentry we do on the cabins, and it belongs in these houses more than it does in a new one.
